I created this version of paleo all purpose flour mix after I had been following a mix of the Mediterranean diet and Paleo diet BUT missing baked goods! I have always loved baked goods and love baking for my family. This flour mix has been perfect for many recipes I use! I like to have a batch of this flour on hand at all times for ease of use.
Recipe
Makes 4 cups. Gluten Free/ Paleo Flour Blend
2 cups nut flour (Almond, cashew, pecan, etc. See the notes for making nut flour)
1 1/2 Cups Tapioca Starch (sometimes called tapioca flour)
1/2 cup coconut flour
Directions
Place the three flours in a bowl and mix. Store in a sealed container in a cool dry place.
Notes:
To make nut flour place nuts in a food processor and process until a flour forms. Be careful not to over process as this will form nut butter. Check the flour frequently while processing.
This recipe can use a single nut flour or feel free to make a nut medley flour. I have tried this flour with many different nuts and while this effects the taste, the consistency of baking and use remains relatively consistent.
Almond Flour is easy to find pre-made into flour form that works well in this recipe. I personally have a sensitivity to almonds and always use other nuts and have found a fun variety in flavors by doing so!
