Salad Ingredients
Fresh Kale (about 5oz)
1 organic apple chopped
1/4 cup of chopped pecans or walnuts
1/8 cup of raisins or dried cranberries
Dressing Ingredients
Juice from one lime
1 TBS orange juice
2 TBS olive oil
1 TBS honey
1 TSP mustard
1 clove of music garlic (or 2 cloves of smaller varieties)
Directions
Wash and chop the kale into small pieces slightly larger than a slaw. Add to a large bowl.
Wash and chop the apple into bite size pieces and add to kale.
Chop the nuts and add them to the salad with the dried fruit.
Note: You may store the salad at this point if you add some lemon or lime juice to the apple or mix all ingredients without the apple for up to a couple days.
Add the dressing right before serving.
To prepare the dressing juice one lime.
Add the lime and orange juice, olive oil, honey and mustard to cup.
Mince the garlic and add it to the dressing mix.
Stir to mix the dressing. The mustard will help to hold the dressing together long enough to pour over the salad.
Note: The dressing may be stored in the refrigerator. Dress the salad at the time of serving to prevent the kale from wilting.
